The origin of biryani is told to be in Persia and then brought to India by the Mughals. It was introduced first to feed soldiers and help cure malnutrition and prevent hunger by mixing rice, flesh and ghee in a pot.
How Is Chicken Biryani Made?

Chicken biryani is prepared by first marinating the chicken pieces, preferably the chicken breasts. By adding freshly ground spices(garam masala), ginger garlic paste, salt, oil, lemon juice and half a cup of yoghurt the marination is done and is let to sit for a minimum of 2 hours.
And then thin slices of onion is fried till golden brown and kept separately. Meanwhile, 2 cups of basmati rice are soaked in water for 20 minutes and then the rice cooks in boiling water with spices for precisely 7 minutes.Then the actual cooking starts, by adding ghee and oil in a large saucepan.Add the marinated chicken pieces along with the masala and cook it for some time.After 15 mins, half of the cooked rice is added, and a layer of mint leaves, coriander leaves and fried onion are placed over it along with some chicken curry. Another layer of cooked rice is added and again seasoned with mint, coriander and fried onion. Finally, saffron soaked in a small cup of milk and two tablespoons of ghee are added to the pan to give a beautiful colour to our delicious biryani. Adding a quarter cup of water on top will prevent the rice from becoming very dry. Now the biryani is covered and cooked in medium flame for about 15 mins.
The fame is then switched off, the lid is not opened immediately, but let to sit for some 10 mins for the flavour of the chicken to get absorbed well in the rice as well.
